Chicken Caprese
A classic Italian dish, Baked Chicken Caprese has it all. Tangy balsamic glaze, melted fresh mozzarella cheese, spiced with basil and oregano, and topped with fresh tomatoes before being baked to perfection. It’s a great healthy recipe to ring in the new year.

- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 4 chicken breasts, trimmed and cleaned
- 4 tablespoons olive oil, divided
- 1 pint cherry tomatoes
- 3 cloves garlic, finely minced
- 2 tomatoes, sliced
- 8 ounces mozzarella cheese, fresh, sliced into 8 equal slices

Instructions
- Preheat the oven to 400°F.

- Place the chicken into the pan, and arrange the cherry tomatoes around the chicken so that they bake evenly.
- Place 2 slices of tomato on the tops of each chicken breast then place 2 slices of cheese on top of the tomatoes.2 tomatoes8 ounces mozzarella cheese
- Drizzle on the balsamic glaze then drizzle on the remaining olive oil.1 tablespoon balsamic glaze
- Bake for 30-35 minutes or until an instant thermometer reads 165°F when inserted into the thickest part of the chicken.
- Serve with freshly chopped basil and another drizzle of balsamic glaze if desired.
