Nothing says fall like an apple cider ice cream float! We make these on repeat as soon as apple cider hits the shelves in September.
They’re part dessert, part drink, and taste kind of like apple pie in a glass. I like to use vanilla ice cream and ice cold apple cider to make sure the floats don’t melt too quickly.
For an extra touch, I drizzle caramel sauce in the glass and sprinkle some ground cinnamon over the top after they fizz up.
Those are optional, of course, so all you really need are the two main ingredients and about 5 minutes to make this fun, fall drink!

How to Make Apple Cider Floats
Here’s a quick overview explaining how I make these ice cream floats. The full recipe is further down the page.
Start by drizzling caramel sauce on the inside of the glasses. If you aren’t using caramel sauce, skip this step.
Next, add 2–3 scoops of vanilla ice cream to each glass. The amount depends on the size of the glass you’re using and whether you like more ice cream or more cider.

Slowly pour in the apple cider. It will begin to fizz as it comes in contact with the ice cream. After the fizz deflates a bit, add more cider if needed.
Add a dusting of cinnamon and a fun straw. Enjoy!
Apple Cider Float Tips
- Chill the glasses ahead of time so the ice cream doesn’t melt as fast.
- Try different flavors of ice cream like caramel, cinnamon, or apple crisp.
- Make sure the cider is cold before adding it to the float.
