Caprese Sandwich

Made with basil pesto, thick sliced tomatoes, mozzarella cheese and balsamic glaze, these Caprese Sandwiches have all of the best signature ingredients! They’re quick and easy to make and are perfect to dig into for lunch or even as a lighter fare for dinner.

Ingredients

  • 6 ciabatta sandwich rolls, sliced in half
  • 4 ounces basil pesto
  • 1 large tomato, cut into 6 slices
  • 12 to 15 large basil leaves
  • 12 slices mozzarella cheese, fresh
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 to 3 tablespoons balsamic glaze, (We used store bought.)

Instructions
 

  • Spread 1-2 tablespoons of the pesto on the bottom half of each of the ciabatta rolls.

  • Next, add a tomato slice, followed by 2-3 basil leaves.

    12 to 15 large basil leaves
    12 slices mozzarella cheese
    ¼ teaspoon salt
    ¼ teaspoon ground black pepper
    2 to 3 tablespoons balsamic glaze

  • Then add 2 slices of mozzarella, a sprinkle of salt and pepper and a drizzle of the balsamic glaze.

Honestly, we can probably all agree that basil is what makes the world go round, right?! Well, at least it definitely makes everything it touches more delicious. From drinks to dinner, basil is an ingredient that just can’t be replaced.

Caprese Sandwich

Tomatoes, mozzarella, basil pesto, and tangy balsamic glaze – is there a better combination of flavors? Whoever first concocted the signature flavors of caprese deserves some sort of award!

While this sandwich is easy to make all year long (because we never stop craving caprese), it’s best to bite into during the warmer summer months.

The fresh tomatoes and even fresher tasting basil notes are just so summery, it’d be a shame to not enjoy them sandwiched between two pieces of soft bread on an August afternoon!

Kim’s Tips

Tips
  • If you’d like to toast the sandwiches, place the assembled sandwiches in a toaster oven until they are warmed to your liking. Another option is to toast the ciabatta before assembling the sandwiches.
  • Make sure you’re using fresh, not dried basil in this recipe! Also, take a look at your basil leaves. They should be vibrant green in color and not have any dark spots or other discolorations. 
  • Any tomatoes work well in this recipe. Just make sure you slice them nice and thick for the best bite! Beefsteak or on the vine tomatoes are what we like to use here. 
  • When it comes to the salt and pepper, don’t be too heavy handed. You don’t want them (especially the salt) to overpower the other ingredients. For the pepper, make sure it’s freshly cracked for the best flavor.

Storage and Reheating

Storage: Wrap extra or leftover sandwiches tightly in aluminum foil and refrigerate for up to 2 days. If possible, keep the ingredients separate and assemble the sandwiches just prior to serving.
