This homemade chipotle mayo is one of my favorite condiments. It’s made with simple ingredients and take just a few minutes to whip up.
It’s an easy way to add tons of flavor to anything!
This chipotle sauce is features chipotle peppers in adobo sauce, a bright burst of lime, and savory garlic and onion powder all mixed into a traditional mayo base.
It’s rich and creamy, perfectly spicy, with just a touch of smokey flavor.
What is Chipotle Mayo Made Of?
This delicious spicy mayo requires just a few basic ingredients from the grocery store.
You’ll find the exact amounts near the bottom of the page.
- Chipotle Peppers in Adobo Sauce: You’ll need 1 can of chipotle peppers in adobo sauce. You won’t need all of the peppers, but you will use all of the sauce.
- Lime Juice: I recommend fresh lime juice for the best flavor. If all you have is bottled, that will work too.
- Spices: garlic powder, onion powder, salt
- Mayonnaise: store-bought or homemade mayonnaise

- In a blender or food processor, combine chipotle peppers and adobo sauce, lime juice, garlic powder, onion powder, and salt. Blend until smooth.
- Add the mayonnaise to a medium-sized bowl, then pour in the homemade sauce. Mix to combine, then serve as desired.
Tips and Notes
- When choosing chipotle peppers, keep in mind that the sizes vary. Several small ones may do the trick or you may end up using just a couple of small ones. Just be sure to stay consistent so you can control the spice. You’ll use all the sauce either way!
- Make it vegan. For a vegan version, simply swap the regular mayo out for a vegan variety.
- Prefer a little less spice? Use fewer chipotle peppers.
- Like an extra kick of spice? Add more peppers!
- If you want a thinner dressing for drizzling, try adding a little milk to the mayo. Be careful not to add too much or it will begin to alter the flavor.
Serving Suggestions
This delicious dipping sauce is so versatile! Here are just a few ways you can serve it:
- As a dip. Enjoy it as a dipping sauce with French fries, sweet potato fries or sweet potato wedges, crab cakes, fish sticks, or fresh veggies.
- On a sandwich. Slather it on your favorite burger or chicken sandwich.
- Over a salad or bowl. Thin it out and drizzle it on a Mexican grilled chicken salad or burrito bowl.
- On tacos. Try it on your favorite tacos for a creamy, spicy flavor twist.
- In another recipe. Use it in place of regular mayo in lobster rolls, or in red potato salad.
How to Store Spicy Mayo
This chipotle lime mayo can be stored in an airtight container in the fridge for up to 5 days.
I do not recommend freezing it. The texture of the mayonnaise won’t hold up when thawed.
What is the Difference Between Mayo and Chipotle Mayo?
The difference is that chipotle mayo is just kicked up a notch on the flavor scale!
The chipotle version starts with a mayonnaise base, but is elevated with the addition of chipotle peppers in adobo sauce, a couple of savory spices, and lime juice. It’s spicy, smoky, bright, tangy, and delicious!
Is Spicy Mayo the Same as Chipotle Aioli?
Yep! Aioli and mayo are basically the same thing. Chipotle aioli is just a fancier way of saying “spicy mayo”.
Call it whatever you want! It’s delicious either way.
