Kale Salad

Kale Salad with Cranberries is an easy to make salad that’ll actually fill you up!

Ingredients

Dressing – extra virgin olive oil – apple cider vinegar – maple syrup – Dijon mustard – kosher salt – ground black pepper

Ingredients

Salad – kale – chickpeas – walnuts – feta – dried cranberries

Whisk together oil, apple cider vinegar, maple syrup, dijon mustard, salt & pepper. Set aside.

Chop the kale into small pieces & transfer to a bowl.

Pour about two thirds of the dressing over the kale. Massage into the leaves.

Add walnuts, feta, chickpeas & cranberries. Toss again.

Serve with the remaining dressing drizzled over the top.
