Chicken Mushroom Broccoli Pasta
In a large skillet over medium heat, add the oil and onions. Cook for 3 to 5 minutes, then add garlic and chicken. Cook for 3 to 5 more minutes.
Add the mushrooms and thyme, and cook until the mushrooms soften slightly, about 3 to 4 minutes.
Pour in broth and heavy cream. Stir to combine, then add the noodles. Boil, and reduce to a simmer. Cover and cook for 15 to 18 minutes.
Add the broccoli, and stir. Cover again, and cook for an additional 2 to 4 minutes. Uncover, and add the Parmesan cheese, salt, and pepper.
Serve hot, and store leftovers in the refrigerator for up to 3 days.
