Ingredients

  • 2 pork chops, seasoned with salt and pepper (1-inch thick boneless pork chops)
  • 2 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • ¼ cup light brown sugar
  • ¼ cup bell pepper, diced
  • ¼ cup white onion, diced

Instructions
 

  • Preheat the oven to 350°F, and lightly grease an 11×7-inch baking dish.
  • In a small bowl, combine the ketchup and mustard. Divide the mixture evenly and spread over each pork chop.
    2 tablespoons ketchup
    2 tablespoons yellow mustard
    2 pork chops
  • Sprinkle the pork chops with brown sugar, then top with diced bell pepper and onion.
    ¼ cup light brown sugar
    ¼ cup bell pepper
    ¼ cup white onion
  • Cover the baking dish with foil, and bake for 35-45 minutes or until the internal temperature of the pork chops reaches 145°F on a meat thermometer.
  • Remove the foil and continue baking for an additional 5 minutes to caramelize the top.
  • Let the pork chops rest for a few minutes before serving. Enjoy!
