Preheat the oven to 350°F, and lightly grease an 11x7-inch baking dish.
In a small bowl, combine the ketchup and mustard. Divide the mixture evenly and spread over each pork chop.
2 tablespoons ketchup, 2 tablespoons yellow mustard, 2 pork chops
Sprinkle the pork chops with brown sugar, then top with diced bell pepper and onion.
¼ cup light brown sugar, ¼ cup bell pepper, ¼ cup white onion
Cover the baking dish with foil, and bake for 35-45 minutes or until the internal temperature of the pork chops reaches 145°F on a meat thermometer.
Remove the foil and continue baking for an additional 5 minutes to caramelize the top.
Let the pork chops rest for a few minutes before serving. Enjoy!
