Sweet Potato Biscuits

In a large bowl, whisk together the flour, baking powder, and salt. Set aside.

Use a fork to mash the sweet potatoes. Add the brown sugar, cinnamon, and nutmeg, then microwave for 2-3 minutes until the potatoes are warm.

Add the heavy cream, and stir to combine.

Pour the potato mixture into the flour mixture. Use a wooden spoon to mix, then transfer the dough to a floured work surface. Knead until the dough comes together.

Roll the dough to about an inch thickness. Dip a biscuit cutter into flour, and cut straight down into the dough without twisting.

Place the biscuits onto the prepared baking sheet, and bake at 425°F for 20 to 25 minutes until the tops of the biscuits are golden brown.
