Ingredients

For the Filling:

  • 1 pound ground beef
  • 1 small onion, chopped

  • 10 ounces diced tomatoes with green chilies, like Rotel, undrained
  • 1 ounce taco seasoning, 1 packet
  • 1 cup shredded cheddar cheese

For the Cornbread Topping:

  • 1 box Jiffy cornbread mix, or your favorite cornbread mix
  • 1 large egg
  • ⅓ cup milk

Instructions
 

To Make the Filling:

  • Preheat your oven to 400°F. Lightly grease a 9×13-inch baking dish.
  • In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.

  • Add the chopped onion and bell pepper to the skillet with the beef. Cook until the vegetables are tender, about 5 minutes.
