Cook bacon until crispy.
Cook beef & seasoning until browned. Drain.
Cook the veggies & seasoning until softened.
Add diced potatoes & broth. Bring to a boil & cook until tender.
Make a roux in a small pan & pour into the soup.
Mix in the Velveeta, beef, bacon & sour cream. Serve warm.
