Place heads of garlic on a baking sheet. Drizzle with olive oil & sprinkle with salt.
Wrap the garlic & bake 30-40 minutes. Allow to cool.
Squeeze garlic out of the peels. Press firmly & stir until smooth.
Whip the butter. Add garlic & mix until incorporated. Stir in chives.
Spread butter on your favorite toasted baguette, baked potatoes, or melt over veggies.
