Ingredients

For the Dressing:

  • ½ cup olive oil
  • ½ cup white wine vinegar adjust to taste
  • 1 ½ teaspoon dried oregano
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

For the Salad:

  • 16 ounces baby heirloom tomatoes halved
  • 8 ounces block-style feta cheese cut into ¼-inch cubes
  • 2 tablespoons freshly chopped basil
  • 2 tablespoons freshly chopped parsley
  • Salt and pepper to taste

Instructions

  • Place all dressing ingredients in a bowl or jar with a lid and whisk or shake to combine.

  • In a large bowl, combine the tomatoes, feta cheese, basil, and parsley.
    16 ounces baby heirloom tomatoes, 8 ounces block-style feta cheese, 2 tablespoons freshly chopped basil, 2 tablespoons freshly chopped parsley
  • Pour the prepared dressing over the salad ingredients, adjusting the amount based on preference.
  • Sprinkle with additional salt and pepper to taste. Gently stir to combine all ingredients.

  • Cover and refrigerate for at least an hour before serving. Stir gently before serving and enjoy chilled.
