Preheat the oven to 425°F, and line a large baking sheet with aluminum foil then spray the foil with cooking spray.
In a small bowl, combine the Italian seasoning, garlic powder, salt, and pepper. Set aside.

Place the sausage, potatoes, pepper, broccoli, green beans, and onions onto the baking sheet. Drizzle with avocado oil and sprinkle with the seasoning mix.

Toss to combine then distribute the ingredients evenly across the baking sheet so everything is in a single layer and not overlapping.
Bake for 20 minutes then remove from the oven. Add the tomatoes and stir the ingredients. Return to the oven and bake for an additional 15 to 20 minutes until the sausage and vegetables are roasted to your liking.
