Peanut Butter Rice Krispie Treats

Ingredients

  • ¼ cup unsalted butter
  • 10 ounces mini marshmallows
  • Pinch salt
  • cup creamy peanut butter
  • 1 tsp. pure vanilla extract
  • 6 cups Rice Krispies cereal
  • 3 cups chocolate chips any variety; about 1 ½ (12 ounce) bags

Instructions

  • Spray a 9x13-inch pan with cooking spray, grease with butter, or line with parchment paper. Set aside.
  • Melt the butter in a large pan over low-medium heat then add the marshmallows and salt.

  • Stir the marshmallows continuously until melted then add the peanut butter and vanilla.

  • Remove from heat and add the Rice Krispie cereal. Work quickly to stir in the cereal then transfer to the prepared pan.

  • Use a buttered spatula to gently press into an even layer.

  • Melt the chocolate chips on half power in the microwave stirring every 15 to 20 seconds. Pour the melted chocolate over the Rice Krispie treats in an even layer. Spread smooth with a spatula.
