Preheat your oven to 350°F (175°C). Arrange the baguette slices on a parchment lined baking sheet and brush them lightly with 1 tablespoon of olive oil. Bake for 8-10 minutes or until golden brown and crisp.

Line a small, oven-safe skillet with parchment paper and place the brie in the skillet. Cut some slits across the top, and drizzle with the remaining olive oil.

Bake at 350°F for 20-25 minutes. In the meantime, heat the cranberry sauce in a small pan over low heat until warmed through.

Remove the cheese from the oven and top with warm cranberry sauce, chopped pecans, and a drizzle of honey. Add fresh thyme and a pinch of flaky salt for garnish.
