Preheat the oven to 350°F, and spray a 1-quart casserole dish or an 8-inch oven safe skillet with non-stick olive oil spray. Set aside.
Add the goat cheese and cream cheese to a large bowl, and use a hand mixer to cream together until fluffy.
16 ounces goat cheese, 8 ounces block-style cream cheese
Add the garlic, Italian herbs, salt and pepper and beat again until thoroughly combined.
3 cloves garlic, 1 teaspoon Italian herbs, ½ teaspoon salt, ½ teaspoon ground black pepper
Stir in the parmesan cheese, then add the mixture to the prepared baking dish. Spread it out into an even layer.
1 cup Parmesan cheese
Drizzle 1 tablespoon of olive oil over the top, then add the tomatoes in whatever design that you prefer.
2 tablespoons olive oil, 1 ½ cup cherry tomatoes
Drizzle the remaining tablespoon of olive oil over the tomatoes, and bake for 35-40 minutes or until it starts to turn a light golden color and the tomatoes are soft.
Lightly drizzle more olive oil on top, garnish with fresh basil leaves and serve with toasted baguette slices if desired.
