Ingredients
For the Apple Cider Vinaigrette:
½cupextra virgin olive oil
¼cupapple cider vinegar
1 to 2tablespoonshoneyor maple syrup
1tablespoonfreshly squeezed lemon juice
1teaspoonDijon mustard
½teaspoongarlic powder
¼teaspoonsalt
⅛teaspoonblack pepper
For the Salad:
6cupsmixed greensromaine, bibb, or a spring mix
1medium applethinly sliced
¼cupthinly sliced red onion
½cupcrumbled feta cheese
½cupchopped walnutslightly toasted
⅓cupdried cranberries
½cupapple cider vinaigrettefrom above or store-bought
Instructions
To Make the Dressing:
Add all ingredients to a jar with a tight-fitting lid.
½ cup extra virgin olive oil, ¼ cup apple cider vinegar, 1 to 2 tablespoons honey, 1 tablespoon freshly squeezed lemon juice, 1 teaspoon Dijon mustard, ½ teaspoon garlic powder, ¼ teaspoon salt, ⅛ teaspoon black pepper
Shake well until the dressing is smooth and blended.
Taste and adjust the seasoning or sweetness as needed.
To Make the Salad:
In a large bowl, combine the greens, apples, onion, feta, walnuts, and cranberries.
6 cups mixed greens, 1 medium apple, ¼ cup thinly sliced red onion, ½ cup crumbled feta cheese, ½ cup chopped walnuts, ⅓ cup dried cranberries
Drizzle with half of the vinaigrette and toss gently until everything’s evenly coated.
Add more dressing just before serving, if desired.
