Ingredients

For the Apple Cider Vinaigrette:

  • ½ cup extra virgin olive oil
  • ¼ cup apple cider vinegar
  • 1 to 2 tablespoons honey or maple syrup
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • teaspoon black pepper

For the Salad:

  • 6 cups mixed greens romaine, bibb, or a spring mix
  • 1 medium apple thinly sliced
  • ¼ cup thinly sliced red onion
  • ½ cup crumbled feta cheese
  • ½ cup chopped walnuts lightly toasted
  • cup dried cranberries
  • ½ cup apple cider vinaigrette from above or store-bought

Instructions

To Make the Dressing:

  • Add all ingredients to a jar with a tight-fitting lid.
    ½ cup extra virgin olive oil, ¼ cup apple cider vinegar, 1 to 2 tablespoons honey, 1 tablespoon freshly squeezed lemon juice, 1 teaspoon Dijon mustard, ½ teaspoon garlic powder, ¼ teaspoon salt, ⅛ teaspoon black pepper
  • Shake well until the dressing is smooth and blended.
  • Taste and adjust the seasoning or sweetness as needed.

To Make the Salad:

  • In a large bowl, combine the greens, apples, onion, feta, walnuts, and cranberries.
    6 cups mixed greens, 1 medium apple, ¼ cup thinly sliced red onion, ½ cup crumbled feta cheese, ½ cup chopped walnuts, ⅓ cup dried cranberries
  • Drizzle with half of the vinaigrette and toss gently until everything’s evenly coated.
  • Add more dressing just before serving, if desired.
