In a medium saucepan, heat the bacon grease over medium heat. Add the diced onion and cook until softened, about 3–4 minutes.

Stir in the rice and let it toast for a minute or two until it starts to smell fragrant.
1 cup uncooked long grain white rice
Pour in the diced tomatoes, then add the broth. Season with salt and pepper.
14.5 ounces diced tomatoes, 2 cups low-sodium chicken broth, ½ teaspoon salt, ¼ teaspoon black pepper
Bring to a light boil, then reduce the heat to low. Cover and simmer for 18–20 minutes, or until the rice is cooked through and most of the liquid is absorbed.
Remove from heat and let it sit (covered) for 5 minutes. Fluff with a fork before serving.
