Southern Tomatoes and Rice Recipe

Ingredients

  • 2 tablespoons bacon grease or unsalted butter
  • ½ cup finely diced onion about half a small onion
  • 1 cup uncooked long grain white rice
  • 14.5 ounces diced tomatoes undrained (1 can)
  • 2 cups low-sodium chicken broth or water
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper

Instructions

  • In a medium saucepan, heat the bacon grease over medium heat. Add the diced onion and cook until softened, about 3–4 minutes.

  • Stir in the rice and let it toast for a minute or two until it starts to smell fragrant.

  • Pour in the diced tomatoes, then add the broth. Season with salt and pepper.

  • Bring to a light boil, then reduce the heat to low. Cover and simmer for 18–20 minutes, or until the rice is cooked through and most of the liquid is absorbed.
  • Remove from heat and let it sit (covered) for 5 minutes. Fluff with a fork before serving.
