One Pan Chicken Green Beans and Potatoes

Ingredients

  • 1 to 1 ½ pounds boneless skinless chicken breasts *See note
  • 1 ½ cups baby gold potatoes cut into small, bite-sized pieces
  • 2 cups green beans ends trimmed and halved
  • ½ cup Italian dressing

Instructions

  • Preheat the oven to 400°F. Line a large rimmed sheet pan (13x18-inch) with parchment paper or lightly grease it.
  • Place the chicken, potatoes, and green beans in a large Ziploc bag or mixing bowl. Pour the dressing over the top, seal, and toss everything together until well coated.

  • Arrange the chicken and vegetables in a single layer on the prepared sheet pan.
  • Bake uncovered for 25–30 minutes, or until the chicken reaches 165°F and the potatoes are fork-tender.
  • Optional: Broil for 2–3 minutes at the end for extra color if desired. Serve warm.

Notes

  • Use two pans if it looks like the pan will be crowded (my pan in the photo is a little bit over full).
  • The cook time can vary greatly depending on the thickness of the chicken. We used boneless, skinless chicken breasts that were about ¾ an inch thick.
  • The chicken breasts can be cut into chunks if desired.
  • Make sure to cut the potatoes small so they cook through at the same rate the chicken cooks, or roast them first.
