Lemon Garlic Barramundi

Ingredients

  • 2 barramundi filets skin on or off (thawed completely)
  • 3 tablespoons unsalted butter melted
  • 2 garlic cloves minced
  • Zest of 1 lemon
  • 1 tablespoon fresh lemon juice
  • 1 ½ teaspoons dried Italian seasonings
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking dish with parchment paper or spray lightly with non-stick cooking spray.
  • Pat the filets dry and place them in the dish, skin-side down if using skin-on.

  • In a small bowl, mix the melted butter, garlic, lemon zest, lemon juice, herbs, salt, and pepper.
    3 tablespoons unsalted butter, 2 garlic cloves, Zest of 1 lemon, 1 tablespoon fresh lemon juice, 1 ½ teaspoons dried Italian seasonings, ½ teaspoon salt, ¼ teaspoon black pepper
  • Spoon the mixture evenly over the filets, coating them completely.
  • Bake for 15 to 18 minutes, or until the fish flakes easily with a fork and the center is opaque.
  • Serve with lemon wedges and garnish with parsley if desired.
