Easy Cilantro Lime Rice Recipe

Ingredients

  • 1 cup long grain white rice jasmine or basmati work great
  • 2 cups low-sodium chicken broth or water
  • 1 tablespoon butter or olive oil
  • ½ teaspoon salt
  • 1 lime zest + 2–3 tablespoons juice (plus more to taste)
  • ½ cup chopped fresh cilantro more to taste

Instructions

  • Rinse the rice in a fine-mesh strainer until the water runs mostly clear.

  • In a medium pot, combine the rice, broth, butter, and salt, and bring to a boil.
    2 cups low-sodium chicken broth, 1 tablespoon butter, ½ teaspoon salt
  • Reduce heat to low, cover, and simmer for 15 minutes.
  • Remove from heat and let it sit covered for 10 minutes.
  • Fluff with a fork. Stir in the lime zest, lime juice, and cilantro. Taste and add more salt and lime juice if needed.
    1 lime, ½ cup chopped fresh cilantro
