Rinse the rice in a fine-mesh strainer until the water runs mostly clear.
1 cup long grain white rice
In a medium pot, combine the rice, broth, butter, and salt, and bring to a boil.
2 cups low-sodium chicken broth, 1 tablespoon butter, ½ teaspoon salt
Reduce heat to low, cover, and simmer for 15 minutes.
Remove from heat and let it sit covered for 10 minutes.
Fluff with a fork. Stir in the lime zest, lime juice, and cilantro. Taste and add more salt and lime juice if needed.
