Ingredients

  • 2 cups jasmine rice
  • 13 ½ ounces full-fat unsweetened coconut milk
  • 1 ¼ cups coconut water
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt

Instructions

  • Rinse the rice until the water runs clear.
    2 cups jasmine rice
  • Add the rice, coconut milk, coconut water, sugar (if using), and salt to a medium saucepan and stir to combine. Bring to a boil then cover and reduce to a low simmer. Cook for 15 to 20 minutes.
    13 ½ ounces full-fat unsweetened coconut milk, 1 ¼ cups coconut water, 1 tablespoon granulated sugar, ½ teaspoon salt
  • Remove from heat and leave the pan covered. Let the rice sit undisturbed for 10 minutes, then fluff with a fork.
  • Top with toasted coconut. Serve warm.
