Christmas Brownie Truffles

Ingredients

For the Brownie Filling

  • 16.3 ounce box brownie mix (We used Betty Crocker fudge brownie mix.)
  • ½ cup vegetable oil *See note.
  • 2 large eggs *See note.
  • 2 tablespoons water *See note.
  • 8 ounces block-style cream cheese softened to room temperature

For the Chocolate Coating

  • 10 ounces dark chocolate melting wafers
  • 10 ounces milk chocolate melting wafers
  • 10 ounces vanilla melting wafers
  • Holiday sprinkles for garnish

Instructions

To Make the Brownies

  • Preheat the oven to 350°F (or according to the package of brownie mix), and grease the desired pan size. We used a 9x13-inch baking pan.
  • Using a large bowl and electric mixer, combine the brownie mix, oil, eggs, and water until combined.

  • Transfer to the prepared baking pan, and bake per the instructions on the box of mix. Ours was for 19-22 minutes for a 9x13-inch pan. Make sure not to over bake! The brownie edges should still be soft. A toothpick inserted in the center should come out clean when finished.
  • Allow the brownies to cool until warm to the touch. Use your hands or a food processor to break the brownies into crumbs. Then incorporate the cream cheese until well mixed. The mixture will be cohesive but oily.
    8 ounces block-style cream cheese
  • Line a baking sheet with parchment paper, and divide the brownie mixture into 1 tablespoon sized portions. Using your hands, roll the portions into balls. Place the brownie balls onto the baking sheet and freeze for 1 hour.

To Make the Chocolate Coating

  • Line a second, large baking sheet with parchment paper. Set aside.
  • In separate microwave-safe bowls, melt each variety of chocolate melting wafers until smooth. Stir at 30 seconds intervals to keep them from scorching.

  • Using a fork, dip each frozen brownie ball into your choice of melted chocolate, and allow the excess to drip back into the bowl. Transfer the dipped truffles onto the second, prepared baking sheet.
  • Let the coating set before adding a drizzle. Refrigerate for a short time if necessary to ensure the coating sets properly.
  • Once the coating sets, add a drizzle with some of the leftover chocolate. Immediately add holiday sprinkles. Allow the chocolate to set again before serving.
