Ingredients

For the Shrimp

  • 1 pound raw shrimp peeled and deveined
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • 1 tablespoon olive oil

For the Salad and Dressing

  • ¼ cup finely chopped red onion
  • ¼ cup fresh lime juice about 2 limes, plus extra to taste
  • 2 teaspoons olive oil
  • ½ teaspoon salt plus more to taste
  • ¼ teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 1 jalapeño seeded and minced
  • 2 ripe avocados diced
  • 2 tablespoons chopped cilantro

Instructions

To Make the Shrimp

  • Pat the shrimp dry, then toss with salt, pepper, garlic powder, and chili powder.

  • Heat a large skillet over medium-high heat, and drizzle with olive oil. Cook the shrimp in a single layer for 1 to 2 minutes per side, just until pink and opaque.

  • Transfer shrimp to a plate and cool for 5 minutes, then chop into bite-size pieces.

To Make the Salad and Dressing

  • In a medium bowl, stir together red onion, lime juice, olive oil, salt, and pepper. Let sit 5 to 10 minutes so the onion softens.

  • Add the shrimp, tomatoes, and jalapeño. Stir to coat.

  • Gently fold in avocado and cilantro (if using). Taste and add extra lime juice or salt if needed. Serve immediately.

How to Store Leftovers

  • This salad is best served fresh since the avocado turns brown quickly. If you think you'll have leftovers, try to wait and add the avocado just before serving. The rest of the salad will stay fresh for about 1-2 days in the fridge.
