Instructions
To Make the Shrimp
Pat the shrimp dry, then toss with salt, pepper, garlic powder, and chili powder.

Heat a large skillet over medium-high heat, and drizzle with olive oil. Cook the shrimp in a single layer for 1 to 2 minutes per side, just until pink and opaque.

Transfer shrimp to a plate and cool for 5 minutes, then chop into bite-size pieces.
To Make the Salad and Dressing
In a medium bowl, stir together red onion, lime juice, olive oil, salt, and pepper. Let sit 5 to 10 minutes so the onion softens.

How to Store Leftovers
This salad is best served fresh since the avocado turns brown quickly. If you think you'll have leftovers, try to wait and add the avocado just before serving. The rest of the salad will stay fresh for about 1-2 days in the fridge.
