In a large skillet or pot with a lid, cook the ground beef and diced onion over medium heat until the beef is browned. Drain excess grease if needed.

Stir in the taco seasoning and rice. Cook for 1 minute, stirring often.

Add the diced tomatoes with their juices and the beef broth. Stir to combine.

Bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 18 to 20 minutes, or until the rice is tender and most of the liquid is absorbed.
Remove from heat. Stir in 1 cup of shredded cheese, taste, and season with salt and pepper if desired. Sprinkle the remaining 1 cup of cheese over the top, and return to the lid to the pan for 2-3 minutes or until the cheese melts.
