Preheat the oven to 400°F, and lightly grease a large baking dish.
Pat the cod filets dry with paper towels, and place in the baking dish in an even layer.
1 pound cod fillets
Sprinkle it with salt, pepper, and paprika.
½ teaspoon salt, ¼ teaspoon ground black pepper, ¼ teaspoon smoked paprika
In a small bowl, combine the olive oil, lemon juice and zest, oregano, shallots, and garlic.
1 tablespoon olive oil, 1 lemon, 1 teaspoon dried oregano, 1 shallot, 2 garlic cloves
Pour the olive oil mixture over the fish making sure to evenly distribute the garlic and shallots.
Bake for 15-18 minutes or until a meat thermometer inserted into the thickest part of cod reads 145°F. Let the fish rest for 5 minutes before serving.
