Sourdough Discard Pancakes
In a large bowl, add flour, discard, sugar, salt, egg, buttermilk, melted butter, and vanilla.
Stir well to combine. Cover and refrigerate overnight.
The next day, remove the dough from the refrigerator and sprinkle with baking powder and baking soda. Stir to combine.
Heat a pan over low-medium heat. Melt butter on the pan, and scoop 1/4 cup of batter onto the hot surface.
Cook for 2 to 3 minutes until bubbles form over the surface, then flip to cook the opposite side.
Cook the opposite side for 1 to 2 minutes, then remove from the pan.
Serve hot with maple syrup and fresh fruit.
