Sausage Sauerkraut Soup
Place a large pot over medium heat, add oil, sausage, and onions. Sauté for 4 to 6 minutes until the onions soften the sausage begins to brown.
Add the broth, and deglaze the pan if needed. Bring the liquid to a simmer. Combine the sauerkraut and pinto beans, and simmer for 30 minutes.
Remove from heat, and allow the soup to cool for 15 to 20 minutes. Stir in sour cream and heavy cream.
Serve hot with bread, crackers, or dinner rolls! Store leftovers in the refrigerator for up to 3 days.
