Combine the flour, milk, sugar, vanilla extract, egg, salt, and club soda.
Melt butter in a skillet. Pour in 1/4 -cup of the crepe batter, and cook briefly on both sides.
Repeat with the remaining batter until all the batter is used.
Place diced plums (or other fruit), sugar, water, lemon juice, and lemon zest in a saucepan.
Cook the mixture over low-medium heat. Use a spoon or a potato masher to mash the fruit.
Place the filling in crepes and roll up tightly. Drizzle with sour cream sauce.
