Mini Carrot Cakes

These Mini Carrot Cakes are simple to make and make for an adorable presentation.

For the Cake: – spice cake mix – instant vanilla pudding – ground nutmeg – ground cloves – vegetable oil – water – eggs – carrots

Ingredients

For the Frosting: – unsalted butter – cream cheese  – pure vanilla extract – powdered sugar – pecans – shredded carrots

Ingredients

Whisk together cake mix, pudding mix, nutmeg & ground cloves. Add oil, water & eggs.

Fold in the carrots. Pour into a baking pan.

Bake until the cake pulls away from the sides of the pan.

Allow to cool. Cut circles out of the cake.

Mix together butter & cream cheese. Add vanilla and powdered sugar.

Decorate the cakes. Top with shredded carrots & pecans.
