Lobster Mashed Potatoes
Boil the tails for 4-5 minutes, then remove the meat. Bring a pot of salted water to a boil. Add the potatoes and empty lobster tails. Boil for about 15 minutes.
Drain the water, discard the lobster tails, and
add the butter, heavy cream, tarragon, salt and pepper. Gently fold in the lobster meat.
Add additional butter or heavy cream to reach the desired consistency.
Transfer the potatoes to a serving dish, drizzle with melted butter, and sprinkle with fresh chives. Serve hot.
