Lemon Ricotta Pancakes

Lemon Ricotta Pancakes are a delicious and refreshing twist on the classic pancake!

Pancakes: – all-purpose flour – baking powder – baking soda – salt – eggs – milk – ricotta cheese

Ingredients

Pancakes: – sugar – vegetable oil – vanilla extract – lemon juice – lemon zest – blueberries – powdered sugar

Ingredients

Honey Butter: – unsalted butter –  salt – honey – powdered sugar

Combine dry ingredients in a bowl. Set aside.

Blend wet ingredients together.

Add the wet ingredients to the dry ingredients & whisk until combined.

Prepare the honey butter by creaming together  the butter & salt.

Add the honey & powdered sugar. Set the butter aside.

Cook the pancakes on a skillet. Garnish & serve.
