Honey Roasted Carrots and Parsnips
Cut the peeled carrots and parsnips into 3 inch pieces, then cut those pieces in half or thirds lengthwise. Place the vegetables into the baking dish.
Drizzle with olive oil and honey, then sprinkle with salt, pepper, and rosemary.
Bake at 400°F for 15 minutes, then gently toss the vegetables. Return to the oven for an additional 15 minutes or until the vegetables are tender.
Serve hot with your favorite entree!
