Garlic and Olive Oil Pasta
Cut across the top of a head of garlic to expose the cloves. Pour 1 tablespoon of olive oil over the exposed cloves.
Wrap the garlic tightly in foil, place it in a pan, and roast it in the oven at 425°F for 30 minutes.
Bring a large pot of salted water to a boil Add the noodles, cook until they are al dente. Drain, and set aside.
Heat a pot over low heat. Add the olive oil, roasted garlic, red pepper flakes, salt, and pepper. Smash the garlic with a spoon, and sauté for 3-4 minutes.
Serve hot with Parmesan cheese if desired.
