Cream Cheese Bruschetta
Cut a baguette into 1/2 inch thick slices and toast until light brown. Set aside.
In a small bowl, combine softened cream cheese and basil. Set aside.
In a medium bowl, combine tomatoes, onions, garlic, basil, and olive oil. Taste, and season with salt and pepper.
Spread the cream cheese mixture onto the toasted baguette slices.
Top with the bruschetta mixture.
Sprinkle each piece with shredded Parmesan cheese.
Serve immediately as an appetizer or snack.
