Beef Enchiladas

Our ground Beef Enchiladas are packed with flavor & topped with a homemade cheese sauce! 

Ingredients

Enchilada Filling: – lean ground beef – white onion – water – taco seasoning

Ingredients

Cheese Sauce: – evaporated milk – whole milk – cornstarch – jalapeños – chili powder – white American cheese – Monterey jack cheese  – salt – pepper – flour tortillas

Cook ground beef & onion over med heat until no longer pink.

Add water & taco seasoning.  Stir & cook 2-3 min. Remove & set aside.

Whisk together cornstarch, milk & evaporated milk.

Add jalapeños & chili powder. Whisk & cook on low-med until liquid steams.

Add cheeses to milk mixture, melting small bits at a time.

Spoon beef mixture into heated tortillas. Place in baking dish.

Pour cheese mixture over tortillas & bake 12-16 minutes.

Serve Warm & Enjoy!
